I waxed poetic about potatoes earlier this week, but let me supplement by saying I love a good sauce. As one of my best friends noted, I like a little food with my sauce. You can probably guess I’m a big fan of gravy as it fuels my Thanksgiving love affair.
I’ve made a lot of gravies in my day, and one of the keys is separating the fat from the flavorful juice. I’ve also tried numerous kitchen tools to achieve this, and the OXO Fat Separator is my favorite (surprise, surprise, I like the 4 cup). Even my husband uses it. It’s large base expertly separates pan juices from fat. For such a durable kitchen tool it’s relatively inexpensive; I’ve had mine for years and it looks brand new.
This Thanksgiving make these potatoes and pour a little sauce over them to impress your friends and family with your skills. Everything else is just gravy.
